Tofu Garden Salad

This tofu garden salad is the perfect appetizer or healthy meal! Bring your favorite dressing!

Ingredients:

- 1/2 package of extra firm tofu (8oz)
- 1/8 cup of extra virgin olive oil
- 2 tablespoons of all purpose seasoning
- 1/2 cup of whole kernal corn
- 1/2 plum tomatoe, sliced into half moons
- Chopped lettuce (pick your measure)
- Salad dressing (your choice)

Directions:

Tofu:

1. Cut tofu into thick cubes
2. In a bowl (that has a cover) sprinkle tofu cubes with olive oil and all purpose seasoning
3. Cover the bowl and shake until tofu is coated with olive oil and seasoning (add additional oil or seasoning as needed)
4. Preheat oven to 375 degrees F
5. Bake coated tofu cubes on a well greased baking sheet for 40 minutes
6. Turn tofu cubes over at the 20 minute mark so they bake evenly

Salad:

1. lay bed of lettuce in salad dish
2. spoon corn onto lettuce
3. Sprinkle tomotoes on top of the corn
4. Cover salad with tofu
5. Enjoy!

Tips:

Be sure to use extra firm tofu
Add your favorite vegetables
Add your favorite salad dressing or seasoning to customize the taste
