Spinach and Almond Salad

Ingredients:

- 1 Bag Baby Spinach
- ¼ C Sliced Almonds (Seasoned or Unseasoned)
- ¼ C Onion (Diced)
- 2 t Salt
- 1 T Olive Oil
- Olive Oil Spray

Directions:

1. In a medium frying pan, sauté onion and almond slices in olive oil
2. Add ½ a bag of Spinach and mix together for about 2-3 minutes.
3. Remove pan from heat. Add the remaining ½ bag of Spinach, spray with olive oil spray, and mix until well-mixed. About 1-2 minutes.
4. Serve.

Tips:
- Most, but not all, of the spinach leaves should be wilted after step 2
