Broccoli and Cheddar Quiche

Try this simple, easy to cook Quiche recipe. It is absolutely delicious!


- 1 prepared 9-inch pie crust
- 1 teaspoon margarine
- 1 small onion, chopped
- 1 cup low fat cheddar cheese, shredded
- 1 cup broccoli florets, chopped
- 1/4 cup red bell peppers, chopped
- 4 eggs or 1 cup egg substitute
- 1 cup skim milk


1. Preheat oven to 375 degrees F
2. In a medium skillet, melt margarine and cook onions, broccoli florets and red peppers until tender
3. In a separate bowl, mix cooked items from step #2 together with the eggs, milk and cheese
4. Pour mixed ingredients into the pie crust
5. Bake for 25 to 30 minutes or until knife inserted in center comes out clean. Let stand for 10 minutes before serving

Instead of margarine, you may consider using a little olive oil to stir-fry items in step #2
Egg substitute is a little tricky at times. Be sure you are familiar with how to use it before trying it in this recipe. You may also want to experiment with egg whites.
