In recent weeks I attended a conference that included lunch. When the time came, the group was pointed to the buffet-style set up where lunch was served. As we were making our way toward the food, the woman organizing the event announced the menu: “chicken sandwiches, turkey sandwiches and a side salad”. I have to confess that as I walked out the door to get my “leaves and water”, I was fighting back some frustration. There were other vegetarians there as well; all of us trying to look excited about the few greens we were able to put on our plates.
It is experiences like this that make me realize that there is still much work to do in terms of educating the general public about healthy choices. For this reason, I’m more excited than ever for the opportunity to be a part of Vegetarian Spotlight.
This year we are planning exciting enhancements to our website. These enhancements are aimed at continuing to educate those that are less knowledgeable about vegetarianism while further supporting our growing community of readers and friends in their healthy lifestyle choices. So, stay tuned!
